FRENCH ONION & BACON DIP

INGREDIENTS

1 onion, thinly sliced
8 slices bacon, cooked and crumbled
1 (12 oz) container sour cream (regular or dairy free)
1/2 tsp garlic powder
1/2 tsp chopped fresh parsley
chips

DIRECTIONS
Heat a large skillet over medium high heat. Add the onion slices. Spread the onions out evenly over the pan and let cook, stirring occasionally for about 10-15 minutes or until onions are slightly caramelized (but not burnt).

In a medium bowl, stir together onions and remaining ingredients (reserving a little crumbled bacon and parsley) until well combined. Cover and refrigerate for a couple hours. Serve chilled with reserved bacon and parsley sprinkled on top.
